Italian Entrees by Rosa

I prepare a number of delectable Italian main courses including:

  • roasted chicken with lemon
  • fish, in a variety of ways
  • frittate (spinach, broccoli, peppers and onions, and more!)
  • gateau di patate
  • polpette di tonno, carne o patate
  • turkey legs all'Americana (baked on a bed of onions, with carrots, calery and potatoes)
  • baked lamb with aromatic herbs
  • stewed rabbit with wthite wine, and polenta
  • polenta taragna
  • pesce finto ("fake" fish made with tuna, potatoes, capers, anchovies, pickled pearl onions; my mother's creative and yummy summer recipe)
  • malfatti (grated bread, butter, eggs, parsley, garlic, parmesan. Dressed with sugo di pomodoro or melted butter and cheese)
  • carne alla Genovese (beef braised in onions, olive oil and bay leaf)
  • gallinella arrosto ripiena
  • many more!
