Italian Entrees by Rosa
I prepare a number of delectable Italian main courses including:
- roasted chicken with lemon
- fish, in a variety of ways
- frittate (spinach, broccoli, peppers and onions, and more!)
- gateau di patate
- polpette di tonno, carne o patate
- turkey legs all'Americana (baked on a bed of onions, with carrots, calery and potatoes)
- baked lamb with aromatic herbs
- stewed rabbit with wthite wine, and polenta
- polenta taragna
- pesce finto ("fake" fish made with tuna, potatoes, capers, anchovies, pickled pearl onions; my mother's creative and yummy summer recipe)
- malfatti (grated bread, butter, eggs, parsley, garlic, parmesan. Dressed with sugo di pomodoro or melted butter and cheese)
- carne alla Genovese (beef braised in onions, olive oil and bay leaf)
- gallinella arrosto ripiena
